Broccoli Bake Gram Fraser

          ¼    c    chopped onion
          6    T    butter
          2    T    flour
          ½    c    water
          ½    c    crumbled saltine crackers
          8    oz   cheeze wiz
         20    oz   chopped broccoli
          3         eggs, beaten

Preheat oven to 325.   Sauté onion in 4 T butter, stir in flour, add water, cook until thick and bubbly. Remove from heat and blend in cheese then add to  thawed broccoli in bowl,  add beaten eggs,  mix lightly to blend.  Pour into greased 1½ qt pan,  cover with crumbled saltines and dot with remaining butter.  Bake 30-40 minutes until lightly browned.







Cole Slaw Gram Fraser

          1         medium cabbage
          2    T    sugar
          ½    t    salt
          ½    t    celery seed
          2    T    tarragon vinegar
          1    t    prepared mustard
          ½    c    mayonnaise

Grate cabbage, doing  half  head  at  a  time.   Combine the rest of ingredients to make dressing and pour over cabbage.   Stir until well mixed.  Refrigerate before serving.







Irish Lasagna Gram Fraser

          1    lb   ground beef                    
          1    ea   can (1 lb., 13 oz) tomato puree         
          1    ea   can (12 oz) tomato paste           
          1    lb   thin sliced mozzarella         
          ¼    t    pepper        
          ¼    t    salt          
          ¼    t    oregano       
          9    ea   lasagna noodles

Brown beef, add puree, paste and seasonings, bring to boil. Layer in 7x11 inch lasagna pan: 1/3 sauce, 1/4 noodles,  1/3 cheese, ending with cheese.  Bake in oven at 325 for 30 minutes.







Vegetable Dip Gram Fraser

          1    C    Mayonaise
          1    C    Sour Cream
          2    T    grated onion
          ½    C    parsley flakes
          1    T    yellow mustard
                    salt & pepper (to taste)

Blend and refridgerate 2-3 hours.  Serve with raw vegetables or bread sticks.







Barbecue Sauce Gram Fraser

          ½    C    chopped onions
          1    T    paprika
          2    T    brown sugar
          1    t    dry mustard
          ¼    t    chili powder
          1/8  t    pepper
          2    T    Worcestershire sauce
          ¼    C    vinegar
          1    C    tomato juice
          ¼    C    catsup
          ½    C    water
          1    t    salt

Mix together and simmer 15 minutes.   Boil 3 pounds of short ribs until nearly tender, spreading  baking pan and pour sauce over them.  Put in oven for 1 1/2 hours.  Good for chicken too.







Gram's Milk Gravy Gram Fraser

         ½C    milk
         3T    flour
         3T    drippings from baked ham

Shake half of milk with flour until smooth, addd to dripping in pan. Stir until smooth,  add remaining milk.  Stir until thick and bubbly.  Cook 2-3 minutes.  Makes 1.5 cups.  Add dash of pepper and salt to taste.







Gram's Lemon Chicken Gram Fraser

         4   chicken breasts skinned, boned & halved           
         ½  Cflour                               
         ½  tsalt                                
   dash of pepper 
   dash of paprika         
         ¼  Cbutter               
         1  Toil                       
         2-4Twater
         3  Tlemon juice        

Place chicken breast between 2 sheets of wax paper and  pound them until thin (about 1/4 inch).   Combine flour,  salt pepper and paprika in bag.  Add breast and shake to coat well, remove and shake off excess.

Heat butter and oil in large skillet until bubbling. Sauté chicken breast a few at a time,  2 to 3 minutes on each side.   Do not overcook.  Drain on paper towels and keep warm.

Drain off all but 2 tablespoons of butter and oil.   Stir in water into drippings, scraping bottom of skillet  to loosen any browned bits.  Add lemon juice and heat briefly.  Return chicken to the skillet for 1 to 2 minutes.  Serves 4-8 







Macaroni & Cheese Gram Fraser

Cook 1 1/2 cups macaroni in boiling salted water until tender; drain.  In saucepan, melt 3 tablespoons butter;  blend in 2 tablespoons all-purpose flour, 1/2 teaspoon salt, and dash pepper.  Add 2 cups milk;  cook and stir until thick and bubbly.  Cube sharp cheddar to make about 2 heaping cups.  Add about half of this to the cream sauce and stir until blended.  Turn macaroni into 1 1/2 or 2 quart casserole, add cream sauce.  Add the rest of the cheese cubes and fold through Now I sprinkle top of casserole  with crushed ritz or saltine crackers, and lightly sprinkle with  paprika.  Bake in 350* oven for 35 or 40 minutes, until heated through and lightly browned.

Christmas Fudge # 1 Gram Fraser

Here is John's Christmas Sweet Treat

I found two fudge recipes, and I'm not sure now which one I made more often, but I think it was the 'fantasy fudge':   Fantasy Fudge:  

3/4Cbutter
3  Csugar
   5 oz can evaporated milk
   12 oz. package chocolate chips (2 cups)
   7 ounce jar marshmallow creme
1  Cchopped nuts
1  tvanila

Combine butter, sugar and milk and bring to boil. Stir to keep from sticking to bottom of pan, and boil 5 minutes, or to 234 degrees on candy thermometer. Stir in chocolate until melted, then marshmallow
creme and  stir.  Add walnuts and vanila.  Blend together and pour into greased 13 x 9 pan. Cool at room temperature, and cut to store.







Christmas Fudge # 2  Gram Fraser

1  tvanila
   13 ounce can evaporated milk
4.5Csugar

Bring to rolling boil, boil 8 minutes, (stirring) then remove from heat and add:

   8 ounce package tiny marshmallows
   18 ounce package chocolate chips
½  Cbutter

Stir until melted, and add:

1-2Cnutmeats
1  tvanila

This sets very fast, so you need to WORK fast to get it spread on a large, ungreased pan before you have a large FUDGE BALL.   Cut in squares when cool.







Peanut Butter Fudge # 1 Gram Fraser

         2    C         granulated sugar
         2/3      C         milk
         1    C         Marshmallow creme
         1    C         peanut butter ( I use chunky - and don't add nuts)
         1    t          vanila

Combine sugar and milk in pot, bring to boil, stirring so it doesn't stick to bottom of pan, and cook to soft ball stage.   Remove from heat and add marshmallow crème, peanut butter and vanilia.  Pour into greased 8x8 inch pan, chill, and cut in squares.  If you use smooth peanut butter, you will want to add chopped peanuts before spreading in cooling pan.

Peanut Butter Fudge # 2 Gram Fraser

         2Cbrown sugar
         1Cevaporated milk
         ½CChunky peanut butter
         1Tbutter
         1tvanila

Combine brown sugar and evaporated milk in a pot, bring to boil, stirring so it doesn't stick to bottom of pan, and cook to soft ball stage.  Add chunky peanut butter, butter and vanilla.  Stir until well mixed and then spread in greased 8x8 inch pan.  If you use smooth peanut butter, you will want to add chopped peanuts before spreading in cooling pan.







Molasses Cookies Gramma Great Thomas

          1    c    brown sugar
          1    c    crisco
          1    c    dark molasses
          3         eggs          
          4    c    flour
          ½    t    vanila
          2    t    baking soda (disolved in a little water)
                    pinch of salt

Combine all ingredients and let chill overnight.  Drop from teaspoon onto greased baking sheet.  Bake in 350 degree over for 10 minutes.







Sliced Pickles Gramma Great Thomas

          4    qt   cucumbers, sliced thin
          2    c    onions, sliced thin
          ½    c    salt
          2    c    sugar, white
          2    c    sugar, brown
          1    t    turmeric
          1    t    celery seed
          2    t    mustard seed
          4    c    vinegar
          ¼    c    red pepper, chopped or pimento (optional)

Mix cucumbers and onion with salt, cover with cold water and let stand for 1 hour, rinse and drain well.  Mix sugar, turmeric, celery seed and mustard seed, then add to cucumbers and mix lightly to coat.  Add vinegar.  Bring mixture to a boil and simmer until cucumbers and onions are tender (about 1 hour).  Pack in hot pint jars, process for 5 minutes.  For color add the red peppers or pimentos to the cucumbers when the spices are added.







Dinner Rolls Gramma Great Thomas

          ¼    c    butter
          4    c    scalded milk
          4         eggs
          ½    c    sugar
          1    t    salt
          6         packages dry yeast
          8    c    flour
                    oil for bowl

Cut up butter in bowl and add hot milk.  When cool, add eggs, sugar, salt, yeast and 4 C flour.  Beat with beater to make a sponge.  Let rise 1/2 hour, then add rest of flour with a wooden spoon.  Add more flour if necessary to make a firm dough.  Roll out on floured board and knead again with hands. Grease inside of large, clean bowl with oil or margarine.  Place dough in bowl, turning dough over so the top of dough is oiled. Let rise again until double in bulk, about 1 1/2 hours.  Shape as desired and bake 15-20 minutes at 375 degrees. Spray my baking pans with Pam.







Cranberries and Apples Gramma Great Thomas

To 1 quart cranberries add 4 medium tart apples, sliced thin.  Add 1 cup water and cook 10 minutes.  Stir to prevent scorching and to crush berries.  Next add 2 heaping cups of sugar and cook for 10 minutes.  Pour into mold and allow to jell.







Chicken & Biscuits Gramma Great Thomas

Cut a chicken in pieces; cook until tender.  Thicken the gravy and place in casserole.  Add biscuits to cover top.  Make biscuits from the following:

         2     C    sifted flour
         2     t    baking soda
         1     t    salt
         2     T    shortening
         ½     C    milk

Mix to a dough  and drop onto a cookie sheet.  Dot each biscuit with butter and bake in oven until brown.







Boston Baked Beans Gramma Great Thomas

Wash and soak overnight one quart of beans.  Then bring to boil and cook 20 minutes and drain.  Put beans in an earthen crock or bean jar and add:

         1     lb   lean salt pork cut in small pieces
         1          small onion
         2     t    mustard
         4     T    molasses
         ½     t    paprika
                    Salt to taste

Cover jar and bake beans in slow over 250 degrees 6-8 hours.  Add water if necessary.  Slow cooking develops flavor and color.







Holiday Brown Bread Gramma Great Thomas

Combine:
         1  Callbran
         3/4Cmilk

Add:
         ½  Cmolasses
         1   egg
         1½ Toil

Sift & add:
         1  Cflour
         1  tbaking powder
         ½  tbaking soda
   pinch of salt

Stir only until well mixed, then add:
         ½  Craisins, plumped

Bake in 350 degree oven, approximately 30 minutes (use toothpick test)







Popcorn Balls Gramma Great Thomas

Place in pan:
         2     C    brown sugar
         6     T    molasses
         1     T    vinegar
         ½     C    hot water

Cook about 30 minutes or until it forms a hair when dropped from a spoon.  
Take from stove and add: 
         ½     t    soda

Poor over:
         8     Qt   prepared popped corn

Butter hands and form into balls at once or press into tins and cut in shape.







Orange Juice Cookies Aunt Betty Ford

         1/3  C    Soft Butter or Margarine
         1    C    Sugar
         2         Eggs
         ¼    C    Orange Juice
         2    C    Flour
         2    t    Baking Powder
         ½    t    Salt
                   Cocunut (if desired)

Mix together then Chill.  Bake at 325 degrees for 10-12 minutes.
